The beans for this bar were sourced from the Cedeño family farm, located in Santo Domingo which has been recognized as the heart of cacao production in Ecuador.
These beans are a cultivar of a controversial genetic strain of cacao; the infamous CCN51. Fermentation of this bean has been a pain point for years as the pod produces an excess of pulp which will yield sour flavours if not strained in the post harvest preparation. This has given it a bad reputation.
This 2015 harvest comes with high regard.
